Rick and Kelly's American Bistro
Imagine a bustling neighborhood eatery that serves classic American food at a “very approachable price point,” according to owner Rick Colomitz. “We want Rick and Kelly’s to be a locals’ gathering place.”
Beginning in mid-July, Edwards’ best location will offer nightly specials envisioned by Kelly Liken (owner-chef of her namesake restaurant in Vail) to create an atmosphere of “that’s my place” with a sense of community and belonging.
For the soon-to-be-famous build-your-own gourmet burger, Kelly is committed to all natural Colorado beef and chicken.
Executive Chef Jude Wargo has developed a lentil-based veggie burger that fits nicely on the vegetarian-friendly menu. Gourmet wood-fired pizzas, fried chicken, ribs, soups, and salads round out the choices.
Rick & Kelly’s will initially open for dinner in July, with plans to add lunch and weekend brunch later on. As well, the outdoor patio will have its own summer bar in a beautiful riverfront setting.
