Homesick for the comfort food found in diners on the East Coast? Reminisce no more. At Blue Plate Bistro, “Everything is done from scratch,” says chef/owner Adam Roustom, who works every shift to supply regional home cooking.
Roustom has been cooking since 1984. He and wife Elli came from Vail Village’s famed Sonnenalp Resort, where he was chef and Elli was sommelier.
He marinates the pot roast in red wine for 24 hours, sears and then braises it. Real food.
There are pulled pork sandwiches, Colorado lamb, and fresh-river Colorado trout. Try the Southern-fried chicken on Saturday nights.
There might be a few-minute wait for the trademark oven-fresh rolls, nine to be exact.
Live music at Sunday brunch accompanies omelets and Eggs Benedict or scrambled eggs with bacon. Desserts are homemade, and locals keep coming back.
