Farm to Table, Literally

Avondale in the Westin Riverfront Resort and Spa is the latest of independent chef/owner Thomas Salamunovich’s trio of restaurants (the others being Larskpur in Vail and Larksburger in Edwards). Avondale offers simple, seasonal cuisine at a moderate price point.
A chef goes to the farm daily to pick ripe vegetables, returning to the kitchen to cook and serve them the same day. Salamunovich has an exclusive relationship with a farmer in nearby Gypsum who has built a greenhouse for the year-round task.

Executive Chef Jeremy Kittelson oversees the 140-seat Colorado-concept eatery with the posh, contemporary New-York-state-of-mind style. He works in concert with Mike Regrut, executive chef of the Westin Riverfront Resort and Spa and formerly of Larkspur.
The bar features an indoor fire element — or Redondo — that overlooks the Eagle River. A 70-seat deck has a permanent bar and two fire pits, ideal for après ski recuperating and socializing.

There also is the Avondale Market, ten steps from the Riverfront gondola. Chef Adam Venner prepares breakfasts, lunches, and prepared takeout dinner items.
